Homemade Minestrone

Ingredients

  • 2 tbls. olive oil
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, chopped
  • 2 cloves minced garlic
  • 1 cup chopped zucchini squash
  • 1/2 small head green cabbage, chopped
  • 1 tbl. chopped fresh basil
  • 1 tbl. chopped fresh parsley
  • 1 (14-oz.) can diced tomatoes, drained
  • 1 (15-oz.) can red kidney beans, rinsed and drained
  • 10 cups low-sodium chicken broth
  • 2 tsps. salt
  • 1 tsp. black pepper
  • 1/2 cup orzo or letter pasta

Instructions

1. Put olive oil in a large stock pot, sauté carrots, celery and onion for 5 minutes. Add in the garlic and continue to sauté for another 2 minutes.

2. Stir in the zucchini, cabbage, fresh herbs tomatoes kidney beans, chicken broth, salt and pepper. Bring soup up to a boil.

3. Reduce heat to low and cover stirring occasionally. Simmer soup for 30 minutes.

4. Add in 1/2 cup orzo or letter pasta and continue to cook another 10 to 15 minutes or until pasta and vegetables are tender.
