Homemade Minestrone
Ingredients
- 2 tbls. olive oil
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 small onion, chopped
- 2 cloves minced garlic
- 1 cup chopped zucchini squash
- 1/2 small head green cabbage, chopped
- 1 tbl. chopped fresh basil
- 1 tbl. chopped fresh parsley
- 1 (14-oz.) can diced tomatoes, drained
- 1 (15-oz.) can red kidney beans, rinsed and drained
- 10 cups low-sodium chicken broth
- 2 tsps. salt
- 1 tsp. black pepper
- 1/2 cup orzo or letter pasta
Instructions
1. Put olive oil in a large stock pot, sauté carrots, celery and onion for 5 minutes. Add in the garlic and continue to sauté for another 2 minutes.
2. Stir in the zucchini, cabbage, fresh herbs tomatoes kidney beans, chicken broth, salt and pepper. Bring soup up to a boil.
3. Reduce heat to low and cover stirring occasionally. Simmer soup for 30 minutes.
4. Add in 1/2 cup orzo or letter pasta and continue to cook another 10 to 15 minutes or until pasta and vegetables are tender.
Serves 6
