Guiness Stew

Instructions
Preheat oven to 350 degrees.
Dry the cubes of beef with paper towels.
Return the beef, along with its juices to the casserole.
Cover.
Bake 1-1/2-2 hours, stirring occasionally.
Stir in the flour, cook for 2-3 min.- do not let the flour burn.
Heat oil in a heavy casserole which will fit into the oven and go on top of the stove, add the bacon.Fry until browned, drain the bacon on paper towels. Bring to a boil.
Add the chopped onions, brown lightly.
Brown in the bacon drippings, remove the beef.
Add the bacon, carrots, white onions, stock, guiness, sugar, vinegar, bouquet, salt & pepper.
Serve warm.
*Bouquet Garni - a collection of herbs (traditionally fresh parsley, fresh or dried thyme, and bay leaf) that are bundled together and cast adrift in your pot to flavor a soup, stew, or broth. They are tied together so they can be removed easily at the end of the cooking.
