Ginger Ale Potatoes
Ingredients
- 3-4 large potatoes
- 2-litre bottle of Ginger Ale
- 1 Tbsp butter
- 1 tsp freshly grated ginger
Instructions
Chop the potatoes into bite-sized chunks, a little on the large size. Put the chunks into a pan, then pour ginger ale in until it's about an inch over them. Bring the potatoes to a boil on high, then back the heat down to medium and simmer until the potatoes are tender. While the potatoes are boiling, grate the fresh ginger. Microwave the butter in the microwave until it's soft (about 15 seconds), and stir in the ginger. Remove the potatoes and pour the butter/ginger over, then mix well. Alternately, put the potatoes and topping into a sealable bowl, close the top, and shake to cover well.
