Funky Cornbread
Ingredients
- 1 box of cornbread mix
- 1 egg
- 1 cup of milk
- 1 can of creamed corn
- 1 1/2 cup of shredded cheddar cheese
- 1 pint of sour cream
- 6 chopped spring onions
Instructions
Mix together the cornbread, egg, milk and creamed corn, blending smoothly. Pour into a greased and floured 9X13" pan. Carefully smooth a layer of sour cream (thin with a TBSP of milk if it doesn't spread easily). Then sprinkle a layer of the chopped onions. Finally, sprinkle the cheddar cheese.
Bake at 350 for about 35 minutes. Let cool for 20 minutes or longer before serving it because it needs to firm up.
