Filled Doughnuts
Ingredients
- 1 cake compressed yeast
- 1/2 cup lukewarm cream
- 1 tsp sugar
- 4 eggs, beaten
- 1/4 cup butter or margarine, melted
- 2 T sugar
- 1 cup lukewarm cream
- 1 tsp salt
- 2 tsp vanilla
- 4 cups flour, sifted
Instructions
Dissolve yeast in 1/2 cup lukewarm cream Add 1 tsp sugar and let stand for about 10 minutes. Combine eggs, butter, which has been cooled, sugar, cream, salt and vanilla. Add yeast mixture. Add flour to make soft dough. Beat until smooth. Let rise until doubled in bulk. punch down. Turn out on lightly floured board and roll to 1/2 inch thickness. Cut into 2 inch squares. Place tsp of thick preserves or cooked pitted prune in center of each square. Fold in half and seal edges, kneading slightly so that filling will not come out. Place on floured board with sealed edge on bottom. Let rise until doubled in bulk. Fry in deep fat, at 350(F) until lightly browned. Cool and sprinkle lightly with powdered sugar.
