Fat Free Make Ahead Mashed Potatoes

Ingredients

  • 5 large russet potatoes, peeled and quartered
  • 1/2 cup fat free milk
  • 1/2 cup fat-free sour cream
  • 3 ounces fat-free cream cheese
  • 1/4 teaspoon white pepper salt to taste

Instructions

Boil potatoes in large saucepan until tender. Drain. In a large bowl, mash potatoes using an electric mixer. Mix in milk and beat until fluffy. Beat in remaining ingredients. Add extra milk if needed for smooth light consistency. Transfer potatoes to a lightly buttered casserole dish. Cover and refrigerate.
On the day of serving, heat potatoes in 350 oven until hot - about 30 minutes. They can also be reheated in a microwave.
