Czechoslavkian Cookie Bars
Ingredients
- 1/2 lb. butter (do NOT use margarine...loses great flavor)
- 1 cup sugar
- 2 egg yolks
- 1 tsp. vanilla
- 2 cups flour
- 1/8 tsp. salt
- 1 cup chopped nuts
- 1/2 cup strawberry JAM ( apricot or seedless raspberry are also yummy)
Instructions
Cream butter until smooth. Gradually add sugar, creaming until light and fluffy. Add egg yolks and vanilla. Blend well. Gradually add flour and salt and mix thoroughly. Batter will be stiff. Then stir in the nuts.
Spoon half the batter into a 9"x9" pan, spreading evenly. Spread the jam all over that. Top with the remaining batter. (best to drop by teaspoonsful all over the jam, then wet fingers to spread the top batter. It won't slide all over the jam that way...I learned by trial and error.)
Bake at 325* for app. 1 hr. or until lightly browned. Remove from oven, cool and cut into 1x2 in. squares. Sprinkle with powdered sugar.
These can be made ahead of time and frozen. I do this for early Christmas baking.

I got this from a cousin in New Jersey and have made it for Christmas for several years now and a couple of years ago a lady from our church had a party for her ailing son. She was having a cookie contest and the prize was a lovely school house clock. My daughter entered this recipe and WON!
She won't even share the clock with me. You know, six months here and six months there!
