Creamy Herbed Mashed Potatoes Recipe
Ingredients
- 4 cups cubed peeled Yukon gold potatoes
- 1/2 cup milk (low fat is fine)
- 1/4 cup low-fat sour cream
- 3 tablespoons butter
- 3 tablespoons chopped fresh chives
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
Place potatoes in a saucepan; cover with water. Bring to a boil; cover, reduce heat and simmer 10 minutes or until tender. Drain. Return to pan. Add milk, sour cream, butter, chives, parsley, salt and pepper; mash with a potato masher to desired consistency.
