Crawfish Fettucini

Make a roux with flour and 1/2 stick butter, salt and tabasco. Cook slowly until ALMOST brown; add milk, stir and simmer.

Meanwhile, saute' green onions in another pan with remaining butter until soft. Add crawfish tails and fat.

Simmer for about 8 minutes.; then add to roux with the cream. Simmer for another few minutes while stirring.

Cook noodles in boiling (salted) water until they are just barely done (al dente).

Drain and serve with crawfish mixture. Garnish with parsley
