Corn Maque Choux
Ingredients
- 1 can of sweet corn (drained)
- 1 large onion, chopped
- 1 stick of butter
- green bell pepper, seeded and chopped
- salt and pepper
- little dash of cayenne
- water
Instructions
When I make this, I swear it tastes the best if you do this in an old well seasoned black skillet. If you don't have one of these, thats ok too:)
Melt your stick of butter in your skillet. Pour the corn,onions and bellpeppers in and season.
Fry on medium heat, stirring often. If your corn starts to stick (which is I let it do -- but not burn), add a bit of water and scrape the brown bits off the bottom. I usually cook this for about 45 minutes or so. It comes out yellow to a caramel color. If you have fresh corn BY ALL MEANS use that first. Just make sure you milk your cobs after you get your kernels off and put that in with your corn as well. Also, some ppl add tomatoes to their recipe as well.
