Chuck Wagon Meatloaf

Instructions
1. In 12-inch skillet, melt butter over medium heat. Add onion and pepper and cook until tender.
2. Mix thoroughly ground beef, picante sauce, crushed crackers and eggs. Add onion mixture.
3. Shape into 8x4-inch loaf and place in 13x9x2-inch baking pan. Bake at 350 degrees for 1 hour.
4. Pour enchilada sauce over meatloaf. Bake 5 more minutes.
Serves 8.
