Brown seasoned hen pieces or fryer in hot oil. Remove. Put on platter with paper towel.

In a black cast iron pot, add 1 tablespoon oil. Saut/' onions, bell pepper, celery. Add diced tomatoes, tomato sauce or juice. Bring to a boil. Add roux and stir until blended well. Add chicken pieces and cook until chicken is tender and done (about 1 hour). Add water in small amounts if gravy gets too thick.

Serve over hot rice. Feeds a family of 6.
