Char's Cajun Beef Soup
Ingredients
- 8 quart stock pot
- 2-3 quarts water
- 1 16 oz. can whole kernel corn (w/water)
- 1-16 oz. can creamed corn
- 1-16 oz. can carrots (w/water)
- 1-16 oz. can cut green beans (w/water)
- 3-4 16 oz. cans of tomato sauce
- 2 - 16 oz. cans of sliced new potatoes (w/water)
- 1-16 oz. can of beans (your choice -- I use kidney [red] beans)
- 1-10 oz. can of diced tomatoes and green chilies (Rotel type)
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 2 TB minced or chopped garlic
- Cajun seasoning to taste
- 2# beef stew meat (or you can fake it by cubing a round steak, roast, etc.)
Instructions
Brown stew meat with seasonings, add onions, garlic, and bell peppers. Simmer till meat is almost fork splitting tender. Add all other ingredients and simmer till meat is tender. Stir often to prevent scortching. Please note that the addition of water varies -- it depends on how thick you desire the soup to be! Enjoy!
