Cajun Cheddar Cheese Biscuits

1. Place biscuit mix, sour cream, cooled sausage, cheese and seasoning in a large bowl. Stir in enough half-and-half for a nice dough.
2. Flour hands with some all-purpose flour and place a large heaping tablespoon of dough in your hands and gently shape the biscuits. Biscuits should be at least 2 inches in diameter or larger and about 1/2-inch thick. Place on a sheet pan sprayed with nonstick cooking spray or lined with parchment.
3. Using your forefinger, make a slight indentation on top of each biscuit and top with a little cube of cold butter. Place biscuits in a hot oven (425 degrees preheated) and bake for 10-14 minutes until lightly browned. Serve immediately.
These are great with apple jelly or even hot pepper jelly.
