Brown Bread

1. Grease three 1-pound cans (such as coffee cans). Place water to a depth of about 2 inches in a pot large enough to hold the cans. Place a rack in the pot and bring water to a boil.
2. Meanwhile, sift cornmeal, whole-wheat and all-purpose flour with salt, baking soda and baking powder. Add molasses, milk and raisins. Beat thoroughly.
3. Half fill each of the greased cans and tightly cover with wax paper or foil, using string to tie it down. Place cans on rack in pot and tightly cover the pot, weighing down the lid if necessary. Reduce heat. Steam for 3 hours. Avoid opening the lid for at least the first 2 hours, but occasionally check that the water hasn't evaporated by gently and carefully shaking the pot.
4. Remove wax paper and place cans in 450-degree oven for 5 minutes. Remove bread from cans and cool.
Serve with cream cheese and fruit.
