Broccoli Casserole

Ingredients

  • 1/4 C. chopped onion
  • 4 Tbs. butter (1/2 stick)
  • 1/2 C. water
  • 2 Tbs. flour
  • 8 oz. Velvetta Cheese (cubed)
  • 1/2 tsp. salt
  • 3 eggs, beaten
  • 2 10 oz. pkgs. frozen, chopped broccoli

Instructions

Have broccoli thawed and drained. Gradually blend water into flour until
it is a smooth paste. Saute' onions in butter until almost golden. Stir
blended flour and water into onions. Stir in cubed cheese and salt until
smooth, then add the beaten eggs and stir. Fold in broccoli.

Pour into a greased 2 1/2 qt. baking dish. Cover with cruches Corn Flakes
or Rice Krispies and bake for 30-40 minutes in a 325 oven. serves6-8
