Boxty (Irish Potato Pancakes)

Cook and mash 1/2 pound of potatoes. Grate 1/2 pound raw potatoes and mix into mashed potatoes. Stir in flour. Add salt and pepper to taste. Beat the egg and add to mixture. Add just enough milk to make a batter that will drop from a spoon.

Drop by tablespoonfuls onto a hot, oiled griddle or frying pan. Cook at medium heat for 3-4 minutes per side, until golden brown. Serve hot!

Serve with apple sauce. If you're making these as a St. Patrick's Day special you could even mix a touch of green food coloring into the apple sauce.
