Bourbon Pound Cake
Ingredients
- 1 pound butter
- 2 cups sugar
- 8 eggs, separated
- 3 cups flour
- 2 tsp vanilla
- 2 tsp almond extract
- 1/3 cup Bourbon
- 1/2 cup pecans
Instructions
Cream butter, and sugar until light and fluffy, add egg yolks one at a time, and beat well.
Add flour and flaoring in thirds.
Blend in pecans.
Beat egg whites until stiff-not dry.
Add 1 cup sugar gradually and beat well.
Blend batter into egg whites.
Butter 10" tube pan. Sprinkle some chopped nuts on bottom only.
Bake in 350(F) oven for 1 1/2 hours.
*tips - coat pecans lightly with a little of your flour before adding them into the batter - will keep them from sinking to the bottom.
Source: This recipe was on that is hand written on a piece of paper (includes a grocery list on the back:) from one of Aunt Kathy's neighbors. It's old and yellowed with greasey stains and spots all over it:) It looks well loved:)
