Blue Cheese Mashed Potatoes
Ingredients
- 4 large Yukon Gold potatoes, peeled, cut into 1 1/2 pieces
- 2 tablespoons (1/4 stick) butter
- 1/3 cup whole milk
- 1/3 cup chopped green onion
- 6 oz. Blu Cheese, crumbled
- Salt and white pepper, to taste
Instructions
Cook potatoes in saucepan of boiling salted water until tender, about 20 minutes. Melt butter in small saucepan with milk. Drain potatoes and force through ricer or mash with an electric mixer. Add milk mixture to potatoes and blend. Fold in green onion and Original Blue cheese. Season with salt and pepper, if desired.
