1. In a food processor chop the chickpeas finely.

2. Mash the kidney beans in a bowl and add the chopped chickpeas, grated courgette, nuts, tomato puree, coriander, spring onions, seasoning and beaten egg to bind.

3. Stir until evenly combined.

4. With floured hands, divide the mixture into 8 and shape them into burgers.

5. Press the oatmeal over the burgers to coat them.

6. Heat the oil in a frying pan and shallow fry the burgers for 8 to 10 minutes until golden brown, turning once.

7. Alternatively, brush with oil and grill for the same time.
