Aunt Fanny's Baked Squash

Ingredients

  • 3 lbs. yellow squash
  • 1/2 cup chopped onions
  • 1/2 cup cracker meal or bread crumbs (I actually use well crushed crackers - Ritz are best or the vegetable herb ones- use to your taste)
  • 1/2 tsp. freshly grated black pepper
  • 1 tsp. salt
  • 2 eggs (beaten slightly)
  • 1 Tbs. sugar
  • 1 stick butter (cut in half to use )

Instructions

Wash and cut up squash. Boil until tender (I add the chopped onion in with this to make sure it is done) Drain thoroughly, then mash - but don't mash it too much. We like it to have the texture of the squash.

Add all ingredients to squash except for half of the butter. Pour squash in buttered baking dish.

Melt the remaining butter and mix with another 1/2 cup (or less - to your preference) of cracker crumbs. Put crumb mixture over top of casserole.
Bake at 375 degrees (preheated) for about 1 hour or until brown on top.

This can be frozen (add buttered topping when ready to bake) ahead of time, just be sure and allow for extra baking time or thaw in refrigerator.
