Apple Gingerbread

Ingredients

  • 1/4 tsp. cloves
  • 1 tsp. cinnamon
  • 2 tsps. ginger
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 cups dark brown sugar
  • 2 cups flour
  • 1 cup applesauce, natural/unsweetened
  • 1/2 cup canola oil
  • 3 tbls. milk
  • 2 eggs

Instructions

Makes 1 loaf. Recipe is by Stephanie Riegel and Tracey Koch.

1. Preheat oven to 325 degrees.

2. In large bowl of electric mixer, stir together dry ingredients.

3. Add applesauce, oil, milk and eggs.

4. Beat at medium speed until ingredients are blended. Pour into greased loaf pan and bake for 1 hour, or until knife inserted in the center comes out clean.

(We suggest doubling the recipe and making a couple of loaves at a time. They make great gifts!)
