In a large bowl, mix the meat, finely sliced onions, egg, a 1/4 tsp of ground ginger, 1 tbsp of corn starch, a splash of wine (If you want), a splash of soy sauce, and a dash of salt and pepper together. When the mixture is done, spoon a little into a won ton wrapper, fold it together. Seal with water, pressing the bottom flat to make a little boat shape. With just a little bit of oil, fry the flat bottoms of the won ton till they're golden brown. Simmer the fried won tons in boiling chicken broth for 6-8 minutes.
Serve with the dipping sauce, which is 2:1 soy sauce and rice or white vinegar, with a little green onion and ginger in it.
