Amish Chicken and Dressing

Ingredients

  • 1-1/2 TO 2 loaves day-old french bread (my preference for bread)
  • 1 cup celery, chopped
  • 1 large potato, cooked and finely diced
  • 1 T. celery seed
  • 1/2 t. poultry seasoning (or more to taste)
  • 2 beaten eggs
  • 1 #303 can chicken broth (16 oz.)
  • 1 med. onion, chopped
  • 1/2 cup finely chopped carrots
  • 1 T. dried parsley
  • 1 T. salt
  • 1 t. pepper
  • 1 #303 can chicken and broth (16 oz.)
  • 1/2 cup melted margarine

Instructions

Put all dry ingredients in large mixing bowl and pour liquids over top. If you need more liquid, add more chicken broth or hot water to moisten. Should be very moist before baking. Place in 9 x 13 baking dish and bake at 350 deg. for approximately l hour.

I make this in the crockpot and it makes and keeps the dressing moist and for holidays, clears my oven for other things
