2 Loaf Party Chicken Salad

1. Wash chicken well. Place in large pot and cover with water. Season with black pepper. Bring water to boil and cook over medium heat until chicken is done, about 30 minutes. Remove chicken from pot. Reserve stock for future use if desired. Let chicken cool completely, then remove and discard skin and bones and chop meat in small cubes. (A 4-pound chicken yields about 11/2 pounds of meat).

2. Place cubed chicken in a large mixing bowl. Coarsely chop hard-cooked eggs and add to chicken in bowl. Add celery and parsley. Season mixture with lemon juice, Tony Chachere's seasoning, red pepper and black pepper.

3. Add mayonnaise and mix well. Adjust seasonings, if desired.

You can substitute 6 boneless, skinless chicken breasts for the whole chicken, if desired.

Makes enough for 2 loaves of party sandwiches.
